Ingredients:
4 cups of cooked farro
2 cups of cooked white beans
1 1/2 cups fresh basil
Juice of 2 lemons
2-4 garlic cloves, minced
6 tablespoons extra virgin olive oil
Grape tomatoes, sliced in half
Cucumber, thinly sliced
Scallions, thinly sliced
Directions:
Combine farro and beans in a bowl.
Place the basil, lemon, garlic in a food processor and pulse to combine. With the motor running, add the olive oil in a steady stream until smooth.
Serve with sliced grape tomatoes, cucumber and scallions. Season with salt and pepper.
